Food Hack: Boracay’s Real Coffee Calamansi Muffin

Summer’s here! Those who have been to Boracay probably misses Real Coffee’s Calamansi Muffin. There’s no where to buy these refreshing muffins here in Manila (as far as I know, I could be wrong), so I decided to do a food hack of the muffins.

Recipe and instructions below! Key ingredients for this refreshing muffins are Calamansi and Key Limes.

Calamansi Muffins

Ingredients: (yield 16 muffins)

1 1/4 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
100 grams butter, at room temp. (plus more butter to grease your ramekins or muffin trays.. I was lazy and decided to use cupcake liners.)
1 c sugar
2 large eggs
1/2 cup milk (full cream)
Zest from 1 lime
1/3 c calamansi juice (freshly squeezed) – or key limes
1 tbsp of lime juice


Pre heat oven to 220 celsius
1. mix all the dry ingredients first. Set aside



2. mix: butter and sugar until creamy.


Add 1 egg at a time and mix.


Slowly add the milk, juices, rind, mixed dry ingredients. Mix until smooth.

3. Butter ramekins (or use a cupcake liner if you feel lazy to grease up the trays/ramekins), and fill to 3/4.

4. Place in the oven, automatically reduce heat to 175.



Just keep an eye on them until they puff up and a stick comes clean when inserted. (usually 15mins).
